The ice house workers are packing the ice into the refrigerated cars as quickly as they can. They are working under a tight schedule to get the cars filled with ice so that they can continue without delay so that the perishable fruit cargo is not spoiled. Prior to mechanical refrigeration, fruits and vegetables coming from western markets were kept cool by replenishing the ice every several hundred miles in ice houses just like the one shown above.
The first delivery of cattle was received early in the morning and now it's out the front of the Swift Premium Dressed Meats slaughterhouse all dressed-up and ready for delivery to hungry folks in the city. Refrigerated rail cars and trucks are ready to be loaded, and the workmen move quickly to begin the loading process. Notice the cattle in the stock yard and the chute to which the cattle goes up on their way to be processed
Santa Fe's No. 3754 has just been fired-up, greased-up, and it's ready to roll. Now it has gone on the turntable at the end of the yard for a spin into the west-bound track, where it will pick-up its consist of perishable fruit and highball it out of there to its destination. Turntables were used during the steam era to efficiently change the direction of travel for locomotives. Minor repairs and maintenance as well as preparing the locomotive for travel was done in the roundhouse.
